| Chocolate Chip Cookies (Old Fashioned Recipe)
INGREDIENTS:
- 1 1/2 cups semisweet chocolate chips
- 1/2 cup shortening
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, firmly packed
- 1 egg, well beaten
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup chopped nuts
- 1 teaspoon vanilla
PREPARATION: Cream butter and sugars gradually, and cream together until light and fluffy. Add eggs and mix thoroughly. Sift flour once, measure, add salt and soda and sift again. Add flour in two parts and mix well.
Add cut chocolate, nuts and vanilla, and mix thoroughly. Drop from teaspoon on greased baking sheet 2 inches apart. Bake in moderate oven (375°) 10 to 12 minutes. Makes about 50 cookies. |
| Carrot Cake
INGREDIENTS:
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 4 eggs, beaten
- 3 cups self-rising flour
- 2 teaspoons ground cinnamon
- 2 cups grated carrot
- 1 1/2 cups chopped pecans or walnuts
PREPARATION: In a large mixing bowl combine sugar, oil, and eggs; beat well. Blend in flour and cinnamon. Add carrots and chopped pecans or walnuts, stirring until well blended. Pour into a generously greased and floured 10-inch tube pan or Bundt pan.
Bake at 350° for 1 hour, or until cake springs back when lightly touched with finger. Frost with cream cheese frosting or glaze as desired. |
| Double Chocolate Chip Ice-Cream
INGREDIENTS:
- 2 1/2 ounces unsweetened chocolate
- 1 cup granulated sugar
- 1 cup milk
- 2 cups heavy cream
- 1 teaspoon vanilla
- 1/4 to 1/2 cup semisweet chocolate chips
- chopped nuts or mini marshmallows, if desired
PREPARATION: In a 2-quart saucepan, heat chocolate, sugar, milk, cream and vanilla until chocolate is melted. Cool. Pour the mixture into a blender and process until smooth. Add chocolate chips (or chunks of your favorite chocolate bar) and blend until chips are broken up. Pour into prepared ice cream maker and freeze according to manufacturer's directions. Just before done, add chopped nuts or marshmallows. Makes 1 quart. |
| Low Fat Southern Fried Chicken
INGREDIENTS:
- 4 skinless chicken breast halves, about 4 to 6 ounces each
- 2 cups low fat buttermilk
- 1/2 cup corn flake crumbs
- 1/2 cup flour
- 1/4 tsp salt
- 1 tsp pepper
- 3 tbsp vegetable oil
PREPARATION: In a covered container or sealed heavy duty food storage bag, soak chicken in buttermilk for 4 hours in the refrigerator. Discard buttermilk. Combine corn flake crumbs, flour, salt, and pepper in a medium bowl. Dredge chicken in the mixture until well coated. Heat the oil in a large skillet. Fry the chicken for 15 to 20 minutes, turning once. Drain chicken thoroughly on paper towels before serving |
| New York Style Cheesecake with Strawberries
INGREDIENTS:
- 5 tablespoons melted butter
- 1 1/4 cups graham cracker crumbs
- 1/4 cup granulated sugar

- 4 packages (8 ounces each) cream cheese, softened
- 1 can (14 ounces) sweetened condensed milk
- 4 eggs
- 1/3 cup all-purpose flour
- 1 tablespoon vanilla extract
PREPARATION: Preheat oven to 300°. Combine crust ingredients and press into bottom of a 9-inch spring form pan.
In a large mixing bowl, beat cream cheese until fluffy. Gradually beat in condensed milk; beat until smooth. Add flour, eggs, and vanilla; beat until sell blended. Pour into prepared crust. Bake for 1 hour, or until lightly browned. Cool. Chill and garnish with dollops of whipped cream around edge and sliced fresh strawberries. | |
